Meewasin skating rink season opening.

We have lots of volunteers, so just come and enjoy!

 

Blades 50-50 Ticket Sales

We need 4 people each game for sales. We are not providing the required amount of ticket sellers. This puts us in jeopardy of losing this fund raiser.

Please look at the dates and find what you can work. We need everyone to come out and help with this fund raiser.

Membership dues

Our fiscal year starts October 1st. That means memberships are due.

$20.00 for the year.  Cost is $85.00 for the year.

Optimist Get Together December 16th

Saskatoon Optimist Club will give a presentation

on The Optimist Tubing/Snow Boarding hill at Diefenbaker Park.

Supper is $10.00 each.

Includes: Pizza, spaghetti, Caesar salad, cake and pop, coffee or tea.

We will be passing around a tip jar.

GOODY FOR GOODIES

Santa's Victorian Candy Canes

2 cup sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon cream of tartar
3/4 teaspoon peppermint extract
1 teaspoon red food coloring

Mix the sugar, corn syrup, water, and cream of tartar in large, heavy-bottomed saucepan. Stir until the sugar dissolves. Place a candy thermometer in the mixture, and cook without stirring until the thermometer reaches 265° F.

Turn off the heat and add the peppermint extract. Divide the mixture in half by carefully pouring part of it into another pan. Add the red food coloring to one of the pans.

While waiting for the candy to cool, grease three cookie sheets (two as working space, and the third to provide a non-stick surface for the canes to cool).

Butter your hands, and use a buttered spatula to cut off a portion of one of the clear taffy. Have a helper do the same with the red taffy.

Pull and fold the pieces repeatedly on your cookie sheet until they appear glossy, then roll them into an 8-inch long coil. Give the head of the cane a twist before setting it aside to cool on the third greased cookie sheet.

Makes 6 medium sized Candy Canes

The original candy cane had a shape different than the modern day design. It was straight, all white, and hard.

GOODY FOR GOODIES

 

BACON CHEESE QUICHE

 

    4 Eggs

    3/4 cup Cream

    3/4 cup Milk

    1/2 cup Grated cheese

    3/4 cup Chopped bacon

    1 cup Packet pastry mix (dry)

    1 tbsp Melted butter

    1 Chopped onion

    1 tsp Chopped parsley

 

   Lightly beat the eggs, then add all other ingredients and beat together.

Place into a large greased pie dish and bake 35-40 minutes at

320 degrees F (160 degrees C).

Cheryl’s Quick Soup

 

     I just made this on Sunday and the family loved it, so I thought I’d share it with you. Quick and easy comfy food.

 

3 chicken breast (cut into chunks)

¾ pkg. pre cut broccoli

1 small onion (cut for soup)

2 celery stalks (cut into chunks)

2 carrots (cut small)

3 small potatoes (diced small)

2-3 containers chicken broth (Campbell’s)

5-6 bay leaves

1 tsp. Basil

Salt and pepper to taste

1 cup frozen peas

¼ head cabbage (cut for soup)

1 cup pre cooked shrimp (tails removed)

 

Put everything in a crock pot except peas, cabbage and shrimp.

Cook on low for about 6 hours.

Add peas, cabbage and shrimp. Cook for another hour.

 

Serve with fresh buns.

and how much fun we have.

 

GOODY FOR GOODIES

 

SULFURIC ACID SWIG

 

6 oz lemonade, frozen concentrate -- partially thawed

1/2 cup lemon juice

1 cup grapefruit juice -- cold

2 qt lemon sherbet

1 qt Club Soda -- cold

 

Recipe by: Creepy Cuisine, Lucy Munroe

In a large pitcher, mix together the lemonade concentrate, lemon juice and grapefruit juice. Add to this the amount of water required on the lemonade can.Pour the liquid into tall glasses, filling them halfway, and add a scoop of lemon sherbet to each. Fill the glasses with club soda and serve immediately.

 

Just before serving, sprinkle the top of each glass with a pinch of lemon or lime-flavored powdered drink mix.

 

Makes for a totally toxic-looking treat!

GOODY FOR GOODIES

 

HEARTY HALLOWEEN SOUP

 

    1 lb ground turkey

    1 cup chopped onion

    1 cup celery, diced

    ½ head cabbage cut for soup

    2 cloves garlic, diced

    6 cup water

    1 cube vegetable, beef or chicken bouillon

    1 cup red potatoes, diced

    1 bay leaf

    1/8 tsp basil

    2 tbsp parsley, chopped

    1/2 tsp thyme

    6 tomatoes, diced

    1 cup leftover turkey gravy

    2 cups vermicelli

 

Place everything except vermicelli in the pot and simmer 1 hour. Add vermicelli and simmer until cooked. Great for slow cooker.

 

More suitable after Thanksgiving than at Halloween.

 

Serves 6.

Police Event on September 21st was a fantastic event. Saskatoon City Police were very pleased with us and are very optimistic of our future together.

 

 

The next meeting is October 7th. We will be traditionally passing the gavel. Everyone is encouraged to come out. Friends, family and potential new members are welcome.

GOODY FOR GOODIES

 

Halloween Hash

 

    1      Pound        ground beef

    1      Large         onion, chopped

    1      Teaspoon   salt

    1/4  Teaspoon    pepper

    1      Cup           stewed tomatoes

    1      Can           Whole Kernel Corn -- (2 1/2 cups)

    1/4  Pound         Cheddar cheese, cubed

 

Place ground beef, onion, salt and pepper in skillet. Cook and stir over heat until meat is lightly browned and onion is soft. Drain off grease before adding other ingredients. Add tomatoes and corn. Cover and simmer over low heat about 30 minutes. Stir in cheese cubes. Cover skillet and let stand a minute or two until cheese melts.  Serve with nacho chips.

GOODY FOR GOODIES

RIB SOUP  From the kitchen of Sylvia Weyer

 

       2 pkgs. Of ribs

       1 onion chunked

       3 carrots cut up

       2 celery stalks cut up

       2-3 potatoes chunked (with or without skin)

       2 bay leaves

       6-8 peppercorns

       Salt to taste

       1 tbsp. Half and half cream

       1/4 head of cabbage cut

Put ribs in large roaster and cover with water and a lid. Cook in oven.

When done, take ribs out. Cool ribs and liquid.

When cooled, cut ribs and strain liquid to remove fat.

Put strained liquid in a soup pot or crock pot.

Add all ingredients except cabbage and cream. Cabbage cooks faster so add it a little later. Add cream ½ hour before serving.

Serve with buns.

GOODY FOR GOODIES

MEAT BALL STEW

 

   2 lb Minced pork

   1 tbsp Fat

   1 ea Onion

   1 tsp Salt

   1/4 tsp Pepper

   1/8 tsp Cloves

   1/2 tsp Cinnamon

   1/2 tsp Nutmeg

   3 pt Water

   1/2 c  Browned flour

 

Mix the seasonings with the meat in a large bowl, add the onion, browned in the fat. Work the mixture with the hands to make sure the seasonings are well distributed. Look over your stock of spices and use your imagination. Remember that no one spice should predominate. Shape the meat into 1 1/2 inch balls and flour them lightly. Drop them into 3 pints of boiling water and cook slowly for 1 1/2 hours. At the end of this time thicken the stock with 1/2 cup of browned flour. Browned flour may be added directly to stock without being mixed to a paste if the stock is boiling there will be no lumps. The stock will gel when cool and your ragout de roulettes will keep for some time.

Ladies Autumn Gala - Friday, October 25th

 

  

Optimist International is made up of autonomous Optimist Clubs that do work in their communities. Each club raises its own funds and chooses its own service projects to improve the lives of children. Examples of typical projects are sponsoring youth athletic leagues, scholarship essay and speech contests and supporting local schools.

 

GOODY FOR GOODIES

 

MAPLE KIELBASA BITES

 

      12 oz   Kielbasa

       2 tbsp Dijon Mustard

     1/4 c    Maple Syrup

                Skewers

 

Cut Kielbasa into bite-size pieces. Dip pieces into a mixture of maple syrup whisked with mustard. Thread kielbasa on skewers and grill over medium heat, about 3 minutes per side or until browned and heated through.

 

 

We need forty (40) liters of water to produce 1 liter of maple syrup.

Ladies Autumn Gala - Friday, October 25th

 

GOODY FOR GOODIES

MEATBALL MANIA

 

BASIC MEATBALLS

       1 lb Ground Beef

       1 ea Egg, Large

     1/4 c  Onion; Chopped, 1 Small

     1/3 c  Bread Crumbs; Dry

     1/4 c  Milk

     3/4 tsp Salt

     1/8 tsp Pepper

       1 tsp Worcestershire Sauce

 

DIPPING VEGETABLES (cut in grab and dip form)

     Carrots, broccoli, celery, mushrooms, radishes, green onions (to suggest a few).

 

Meatballs: Mix all the ingredients together.  Shape mixture by tablespoonfuls into 1 1/2-inch balls.  (For ease in shaping the meatball, occasionally wet your hands with cold water.)

TO COOK IN A SKILLET:

   Heat 1 tbsp salad oil in a large skillet, cook the

   meatballs over medium heat until brown, about 20 minutes.  Drain off excess fat.

TO COOK IN THE OVEN:

   Place the meatballs in a lightly greased baking pan 13 X 9 X 2 or 15 1/2 X 9 1/2 X 1-inch; bake, uncovered in a 400 degree F. oven until light brown, about 20 minutes.  Drain off the excess fat.

 

When meatballs are cool enough to handle, spear them with toothpicks (or use a fork to spear with). Arrange on a platter with assorted vegetables for dipping. Put out bowls of sauce to dip in: salad dressing (ranch and Italian), sour cream, dill dip, honey mustard or whatever.

This makes a fun meal or a great afternoon snack for Father’s Day or a get together.

GOODY FOR GOODIES

 

Chicken Tandoori (Indian Grilled Chicken)

Categories: Chicken, India, Curries

Yield: 6 servings

 

16 oz Plain yogurt

1/4 c  Lime juice

2 cloves Garlic, finely chopped or pressed

2 tsp Salt

1/4 tsp Turmeric

1/2 tsp Coriander

1 tsp Ground cumin

1 1/2 tsp Ground ginger

1/8 tsp Cayenne pepper (optional)

3 Whole chicken breasts, Split

1 large Onion, finely chopped

1 large Green pepper, finely chopped

 

In large bowl, combine: Yogurt, coriander, lime juice, cumin, garlic, ginger, salt, cayenne pepper and turmeric. Stir to mix. Add chicken pieces and toss to coat. Cover mixture and chicken with peppers and onions. Cover and chill overnight (or longer).

  

Prepare hot coals or preheat oven broiler for 10 minutes. Turn and cook until done, approximately 15 to 20 minutes. Baste with marinade throughout cooking.

GOODY FOR GOODIES

 

LEBANESE CHICKEN (FRAREJ)

 

    4              Chicken breasts, with skin

                    -and ribs

    2 tsp         Salt

    3/4 cup     Olive oil

    3 large      Lemons, juiced

    2 large      Potatoes

    2              Garlic cloves

    1 large      White onion, minced

    4              Roma tomatoes

                    Pita Bread

 

Preheat the oven to 500 degrees F. Rinse in cold water 4 chicken breasts, with skins and ribs. Rub each with 1/2 tsp salt. Mix juice of 3 large lemons 3/4 cup olive oil. Place into a 9x13 baking dish 2 large potatoes, skinned, cut into 1/2 cubes 2 garlic cloves, minced 1 large white onion, sliced into half-circles the lemon/olive-oil mixture. Stir the ingredients to coat the potatoes. Bake in the oven for 10 minutes. Add the chicken breasts and 4 roma tomatoes (or as many as desired) to the backing dish. Generously spoon the hot lemon/oil/garlic mixture over the chicken. Put the dish back into the oven and cook uncovered for another 20 minutes, or until the skins on the chicken turn a very dark brown and the chicken is firm and does not ooze when poked with a fork. Baste the chicken breasts two or three times in the lemon/oil mixture during cooking. Serve with pita bread. Serve each breast with a helping of potatoes, some onions, and a tomato.

NOTE: Skinless breasts dry out too quickly. Remove the skins after the chicken is done.

GOODY FOR GOODIES

 

CHEDDAR FRUIT DROPS

 

1/2 c Butter

1/4 c Sugar -- granulated

1/4 c Brown sugar -- firmly packed

1 Egg -- large

1 t Vanilla

1 1/2 c Unbleached flour

1/2 t Baking soda

1/2 t Salt

1 1/2 c Cheddar -- sharp, shredded

8 1/4 oz Pineapple, crushed, drained

1/4 c Maraschino cherries -- chopped

 

Cream the butter and sugars together until light and fluffy then stir in the egg and vanilla. Add the combined dry ingredients and blend well. Stir in the cheese, pineapple, and cherries. Drop the dough by rounded teaspoonfuls onto an ungreased cookie sheet. Bake at 375 degrees F. for 15 minutes.

GOODY FOR GOODIES

 

Indian Grilled Chicken

 

16 oz Plain yogurt

1/4 c Lime juice

2 clove Garlic, finely chopped or pressed

2 tsp Salt

1/4 tsp Turmeric

1/2 tsp Coriander

1 tsp Ground cumin

1 1/2 tsp Ground ginger

1/8 tsp Cayenne pepper (optional)

3 Whole chicken breasts split

1 large Onion, finely chopped

1 large Green pepper finely chopped

 

   In large bowl, combine: yogurt, lime juice, cumin, garlic, ginger, salt, cayenne pepper and turmeric.

 

  Stir to mix.

 

  Add chicken pieces and toss to coat.

 

  Cover with peppers and onions.

 

  Cover and chill overnight (or longer).

  Turn and cook until done, approximately 15 to 20 minutes. Baste with marinade throughout cooking.

GOODY FOR GOODIES

 

Baked Cheddar Toast

 

       1 c  Heavy Or Whipping Cream

       1 c  Cheddar Cheese; Med. Shredded

     1/2 tsp Nutmeg

     1/4 tsp White Pepper

       4 ea Eggs well Beaten

      12 ea Bread Slices; White

 

In the top of a double boiler, combine the cream, cheddar, white pepper and nutmeg. Stir over hot water until the cheese melts and the mixture is well blended.Remove from the heat and cool to lukewarm. Generously butter a large baking sheet and set aside. Cut the bread slices diagonally and dip each triangle into the cheddar mixture. Place 1/2-inch apart on the baking sheet and bake until browned and bubbly, about 15 minutes. Serve hot.

 

 

The average pencil is seven inches long, with just a half-inch eraser - in case you thought optimism was dead.

Nutella Coffee with Nutella Whipped Cream


From: Stephanie Card

 

8 ounces hot coffee
1 1/2 tbsp + 1 tbsp Nutella
1 tsp cocoa powder
1 tbsp sugar (or more, to taste)
1/4 cup heavy whipping cream

In a large mug, whisk or stir together hot coffee, 1 1/2 tbsp Nutella, cocoa powder and sugar. Add more sugar to taste, if needed.
Whip heavy cream to soft peaks in a small bowl.
In another small bowl, place remaining tablespoon of Nutella. Add 1 tsp of the hot coffee mixture to the Nutella. Whisk together until Nutella has dissolved. Fold Nutella mixture into the whipped cream and spoon it on top of the hot coffee.

Soon White Lightning will be out of the snow and we will be cooking at fund raising events. To coordinate these events many people are needed. There are many things to do from set-up, to cook, serve, collect money, take down, to fill and tidy condiments. Please look close at this list when it’s posted because YOU’RE NEEDED! It’s going to take ALL of us to make the 2013 events a success. Do you have a specific job in mind? Let us know.

GOODY FOR GOODIES

 

 Homemade Chips, Lo cal, lo fat.

 

1 unpeeled baking potato

2 T  Fat free Italian dressing

 

Preheat oven to 500F.

Lightly spray cookie sheet with vegetable cooking spray.

Slice unpeeled baking potato into very thin slices. In bowl, toss potato slices with dressing until evenly coated. Arrange potatoes in single layer on cookie sheet. Bake about 20 minutes or until lightly browned on both sides, turning once after 10 minutes.

Spicy Hot Dates

    2      sticks        butter (do not use margarine)

    1/2  pound        sharp cheddar cheese -- shred

    2      cups          flour, all-purpose

    1/4  teaspoon    cayenne pepper -- or more

    8      ounces      pitted dates

 

     Cream butter and cheese very well. Slowly beat in flour and then add cayenne pepper to taste. Take small pieces of the mixture and wrap securely around each date.

    Place on ungreased cookie sheet and bake in a preheated 425 degree oven for 10-15 minutes.

Time: 6pm-9pm (arrive ½ hour early)

February: Tuesday 5th, Wednesday 6th, Saturday 9th (Anniversary Night),

Tuesday 12th, Monday 18th (start one hour earlier),

Wednesday 20th (Rain Check Night) and Friday 22rd.

Friday, February 15 at 7:00pm

Mulberry's Cafe and Pub, 124 Third Avenue North

GOODY FOR GOODIES 

CROCK POT ENCHILADAS

 

    1       lb             Hamburger

    1                       Onion, chopped

    4 1/2   oz           Can chopped chilies

    1       can           Mild enchilada sauce

   10 1/2   oz          Golden mushroom soup

   10 1/2   oz          Cheddar cheese soup

   10 1/2   oz          Cream of mushroom soup

   10 1/2   oz          Cream of celery soup

    1       bag           Doritos chips

 

   Brown hamburger and chopped onion, pour off grease.

   Put all ingredients in crock pot except Doritos chips.

   Mix and cook low 4 to 6 hours.  Last 15 minutes before

   you are ready to eat, add Doritos chips and stir.

 

Strength is the capacity to break a chocolate bar into four pieces with your bare hands- and then eat just one of the pieces.

Happy New Year ! 2013 is going to be great !

Hopefully everyone had a good time at the Optimist get together. Unfortunately, paying dues was TOTALLY forgotten. So, dues are DEFINATELY due by the 1st meeting in January.

Kryssy B., Brent C. and Sutherland Scouts bartended a wedding New Year's Eve. In return, a donation was given to Sutherland Scouts and The Hub City Optimist Club.

Midtown decorations will be coming down and put into storage on January 7th. The more people that come out to pitch in, the faster and more smooth it will go.

Steak Night is Friday, February 15th. Tickets are available and will be available at the 1st meeting in January. Lots of prizes are needed for this. Please bring prizes to the meeting or contact Dave K.

A letter for donation is available from Dave K. or Brent C.

GOODY FOR GOODIES

 Crock Pot Italian Chicken Dinner

       1      Small Cabbage; cut in wedges
       1      Onion
       1 cup  Mushrooms; canned
       2 tbsp Tapioca; quick cooking
              Sprinkle of Italian Seasoning
       1      Chicken, broiler or fryer
       1 cup  Meatless spaghetti sauce
              Sprinkle of Parmesan cheese, grated
  
In a 3 1/2 to 6 quart crockery cooker place cabbage wedges, onion and mushrooms.
Sprinkle tapioca over vegetables.
Place FROZEN chicken pieces atop vegetables.
Pour spaghetti sauce over chicken, sprinkle with Italian seasoning.
Cover, cook on low-heat setting for 10 to 12 hours. Transfer to a serving platter.
Sprinkle with Parmesan Cheese.
